This review and photos are of the adjustable temp uncapping knife at the top of the two uncapping knives. I placed it side by side with another brand for comparison. I also tried to take a few pictures as it warmed up to see the variation from the readout and across the blade.I will not have a chance to use this until summer, but it has a very good edge and easy to hold handle. Simply press the on button then continue to press the ‘set’ button to increase the temp. I’m excited to use this over my older uncapping knife as it did not have a temp setting and generally felt like I was juggling it to be the right temperature and would usually plunge it in some water between frames so it wasn’t sizzling honey. My old standard unadjustable knife sat in the range of 180F-210F, very hot.This adjustable temp is slightly pricier, but not by a whole lot. I’m confident it feels like it is going to make my life way easier being able to set a slightly lower temperature and not be juggling trying to not burn things, including myself.For the price, I really like the quality of this knife I wish I had started with it instead of the one temp (scalding hot) ‘cheap’ option.
